I think this video is quite clear about it: "3 open" and "2 open" is the number of keys you have to skip; in other words, press a key with your thumb, leave 3 keys unpressed then press another key, leave 2 open, and press a third key. There you go with you major chord. It works for whatever key you press!

OK for the thumb but what does 3 stand for and what do you mean by "open"?
